A big thank you to Charith for sharing her recipe and pics of this very yummy looking meal! Simple yet flavorful! Lightly cook your favorite greens in a little coconut oil. Add some coconut flakes and tumeric to the batch.
How does this yummy meal look?

On Sunday, I had…
Breakfast: 3 eggs scramble with tomatoes, ham, onions, red pepper. Mixed greens salad w olive oil, balsamic, olives, capers
Lunch: post-run mixed greens salad w olive oil, balsamic, olives, capers, ham, pistachios
Snack: purple carrot (I think I needed more food at this time, but was not home…)
Dinner: ate out at Kasa (Indian food place in the Castro)- ordered grilled chicken, a vegan dish of cabbage and curry, relish (cucumber, pepper, green onions, lots of other vegetables cut up). I still felt VERY hungry so I got an extra order of the cabbage dish. Only then did I finally feel somewhat full/satiated.
Snack: banana with almond butter
Overall, feeling very hungry-like I’m eating a lot and reaching for too many nuts and fatty meats to make up for hunger. I find that bananas work very well in combating those hunger pains, especially when combined with almond butter.
