Black Bean Veggie Burger with Mango Salsa

I’ve signed up for her monthly recipe program because lets face it… it’s easy to get in a rut with food eating the same things over and over, or just plain bored so we end up eating out way too often, which can have a negative impact on our health.

So I made her version of a black bean veggie patty with mango salsa. Her recipe puts it on a bun, but I chose to put it over a bed of spinach and add avocado.

This meal is nothing short of amazing. I doubled the recipe so I can freeze the extra. Once it’s made, this meal is faster than fast food and 8000 times better for you. Try it out and let me know what you think!

Ingredients for veggie burger:

2 Tbl coconut oil

1/4 yellow onion, diced

2 cloves garlic, minced

1/2 green bell pepper, diced (I prefer red)

1/4 sweet potato, diced

1 cup veggie broth

1 1/2 cups black beans

1/4 cup hemp seeds

1/4 tsp salt

3/4 tsp paprika

1/2 tsp chili powder

1/2 tsp cumin

1/2 cup cooked quinoa

1 cup mixed greens

Ingredients for mango salsa:

1/2 avocado, diced

1/4 mango, diced

1/4 small red onion, finely diced

1/2 jalapeno, small diced

1/2 lime, juiced

1 Tlb cilantro, chopped

salt and pepper to taste.

directions:

1. Heat 1 Tbl coconut oil over medium high heat. Add in the onion and bell pepper and saute for 3-5 minutes. Add in the garlic and cook 1/2 minutes.

2. Add in sweet potato and 1 cup broth and cook until the sweet potato is soft.

3. Add in the black beans, hemp seeds and spices and cook for an additional 2-3 minutes to combine flavors.

4. Transfer the black bean mix to a stand mixer or food processor and mix on medium until all the ingredients have come together. Add in the quinoa and mix once more.

5. Form into patties and cook on each side in a hot saute pan with a little coconut oil.

6. For the salsa, mix together all the ingredients in a bowl.

7. To serve, place 1/2 cup of greens on a plate and top with veggie burger and salsa. You could put it all between sprouted bread. I chose to top the veggie burger and salsa over a big bed of spinach. SO. DELICIOUS!
